May Day Sprinkle Cake

May Day Sprinkle Cake


2/3 cup soft butter
1 1/2 cups sugar
1 cup milk
3 eggs
2 1/8 cups white flour
3 tsp baking powder
1 tsp salt
1 1/2 tsp. lemon juice (or vanilla if you don't like lemon)
Edible sprinkles


Preheat oven to 350 degrees

butter and flour two 8" baking pans

Cream butter and sugar; add eggs.

In separate bowl combine dry ingredients. Add alternately with milk to butter/sugar/egg mixture.

Add vanilla.

Pour into pans.

Bake 30 to 35 minutes.

Drizzle with light frosting (see recipe below); sprinkle with festive, edible sprinkles.



Light Frosting

2 cups powdered sugar
1/4 cup milk
1/2 teaspoon vanilla

Mix sugar with milk, adding a small amount at a time until the frosting is able to drizzle off spoon.
